Pesto + Feta Stuffed Chicken

One of my go-to dinners lately has been my pesto and feta stuffed chicken breasts. I am a HUGE pesto fan, I could eat it on absolutely everything. So on those nights when I don’t have much time or ingredients this is perfect.

One of my go-to dinners lately has been my pesto and feta stuffed chicken breasts. I am a HUGE pesto fan, I could eat it on absolutely everything. I am also obsessed with the Kirkland one because Costco, duh and it’s also incredibly tasty but not too overpowering with basil.

So on those nights when I don’t have much time or ingredients this is perfect. I always have chicken breasts in the freezer, again thank you Costco. I have been pairing the stuffed chicken breasts with a variety of sides from pasta alfredo to a nice roasted vegetables like broccoli or brussel sprouts. Okay let’s keep this short and sweet here is the recipe. (serves 2 but very flexible)

Ingredients

  • 2 chicken breasts
  • Pesto
  • Feta crumbles
  • Olive oil
  • Salt 
  • Pepper

Preparation

  1. Set oven to 375 degrees F
  2. Make sure your thawed chicken breasts are dry and free of any extra fat. Cut a slit from the top to bottom, making sure it is nice and deep in the breast. It is best if the slit is on the thinner side of the breast for the best shape.
  3. Using a spatula or spoon place about 2 tablespoons of pesto inside each breast
  4. Sprinkle 1 tablespoon of feta crumbles on top of the pesto.

5. Gently push in the mixture to the back of the chicken breast and as best you can completely cover with the top of the breast

6. Lightly oil a pan and place breasts

7. Cook for 20-30 minutes depending on size

With this meal i choose to pair with hassle back potatoes (recipe to come) but like i said it can be paired with anything of your choosing. I absolutely love this simple recipe and it has quickly become a staple.

Imposters is the best underrated show on Netflix right now.

I am a textbook Netflix binge watcher, I have no problem sitting on my couch all day and getting lost in a good TV show. The best way I can describe The Imposters is your favorite rom-com mixed with and air of mystery and depict, Wikipedia describes it as “Dark Comedy”


I am a textbook Netflix binge watcher, I have no problem sitting on my couch all day and getting lost in a good TV show. Now I also have a slightly addictive personality when it comes to things I love. So if I like a song, I’ll listen to it over and over again until well I don’t like it any more ( right now its Dean Lewis – Hold of Me) and I have been known to read an entire book in a day. So when Imposters popped up on my Netflix homepage I gave it a chance and after the first episode, I was hooked. 

The best way I can describe The Imposters is your favorite rom-com mixed with and air of mystery and depict, Wikipedia describes it as “Dark Comedy”. The characters draw you in with lovable personalities that make you feel like you have known them for years. The soundtrack makes you laugh because what rom-com does not have a relatable yet “You really picked this song?” vibe. And lastly the plot twists and turns and keep you on your toes for 2 amazing seasons; that for me easily were watched in a week.. Whoops. 

Now I don’t want to give you any spoilers because I truly believe everyone would enjoy this show for one reason or another. But I will say if you are a fan of a good sitcom and are a fan of say Pretty Little Liars or Scandal please, please watch this show. If you are a crazy person like me you will talk about it so much you’ll then feel the need to watch it for a second round. 

Now sadly the rest of the world wasn’t as thrilled and obsessed with Imposters because they were taken off the air after the second season as Bravo is restructuring their network. Now in my opinion Netflix should 200% pick up this series as their own… but who knows what the suture will bring. For now I highly recommend you at least watch the pilot and let me know what you think, because for me it was that perfect recommendation (thank you Netflix) and became a quick favorite.  So snuggle up with a nice glass of Pinot, or your loved one (my boyfriend was a big fan) and enjoy!

Hearty Cheesy Broccoli Soup

You know when the weather has been acting crazy and even though it’s the middle of summer you really want some comfort food? For me the answer was a huge pot of Cheesy Broccoli soup and yes it hit the spot perfectly.

For me the answer was a huge pot of Cheesy Broccoli soup and yes it hit the spot perfectly. Also it was extremely easy to make and for some reason I cook like I have a family of 10 so bring on the leftovers for work lunches this week. 

Seeing that this is my first recipe that I am sharing I want to let everyone know that I am not a stickler for exact measurements – so if you want a little more or less of a certain flavor, go for it! I think that’s the best part about cooking, you get to customize everything to your own personal taste. 

Okay lets do this…

Ingredients

  • 4 cups broccoli florets
  • 1 ½ cups carrots
  • 1 ½ cups russet potato
  • 1 cup yellow onion
  • 3 large garlic cloves
  • 2 bay leaves
  • ½ tbs chili flakes
  • 4 tbs butter
  • 1 ½ cup half and half
  • 2 boxes (34 oz each) Chicken stock
  • 1 cup flour (i use almond)
  • 2 cups cheddar cheese
  • Salt and pepper to taste
  • 6 strips of bacon

Instructions

1.Prep veggies by cutting broccoli, carrots, potato all into small ¼ inch pieces. Also chop your onion and garlic cloves (they can go in the same bowl). Set all veggies aside.

2. In a large stock pot on medium heat crisp bacon strips (slice into 1 inch chunks)  to your desire (they are for garnish on finished product) once they are done please set them aside.

3. Separate the remaining bacon grease into even halves – transferring one half to a medium sized saucepan.

4. In the medium sized saucepan add butter and melt on medium heat. Once butter is completely melted add onions and garlic. When onions are soft add flour and whisk until smooth. Slowly add in your half and half. Continue to stir this saucepan on low heat while working away on the other ingredients in the stock pot.

5.In the stock pot add all of the chicken stock, bay leaves, chili flakes and bring to a boil. Add in potatoes and carrots, let cook for 5 minutes then add in broccoli. Let cook for around 10-15 minutes until vegetables are nice and tender.

6.Combine medium saucepan to large stock pot and stir completely. Add cheddar cheese and let melt completely (save a little cheddar for garnish), salt and pepper to taste. Let cook for 5 more minutes. Remove bay leaves.

7.Plate and garnish with bacon crumbles and grated cheese. I chose to pair with a toasted baguette. 

Voila! Enjoy your yummy Hearty Cheesy Broccoli soup.
